Yes folks that is 2 whole quarts of chopped tomatoes that we canned over the weekend! It was our first time ever canning anything and we are very pleased with ourselves!
As this summer's weather has been incredibly wonky - it is only now - near the end of September that I am getting enough tomatoes ripening at the same time to even start canning - how crazy is that? From mid-summer to mid-September we were only getting about 6-10 tomatoes a day, and tomatoes for us are like apples - we just grab one several times throughout the day and have a snack. And I have been worried like crazy that we are going to get hit with a September frost and lose hundreds of tomatoes that are almost at the perfect place of ripening - but so far - this September, the weather has been unusually summer-like - thank goodness!
So I will be harvesting tomatoes every day this week and on the weekend we will do more preserving - hopefully I will have enough for 6-8 more quarts! And hopefully this weather will continue for another 2 weeks as we are supposed to have another 2 weeks of summer-like weather. If that is the case I will be able to get a bunch more quarts and a whackload of pint jars stuffed with tomatoes! I am so excited!
This weekend we will also be doing beets and zucchini - woohoo!
Thanks to all of my friends on the preppers networks who showed us the way and told us to go for it - and SciFiChick - you were sooo right girl!

Look at you girl! Feel's awesome doesn't it? I'm so proud of you.... really. We started this one together and we ended up learning some really cool stuff. The best one being that if you just apply a little effort, you can(no pun intended) and will be able to make huge steps on the road to self- sufficiency.
What a great season it has been. I am looking forward to many more! We know the "secret" now!

SciFiChick - the only reason i worked up the guts to finally try and do it is because of you --- you were the inspiration!!! and i always knew that i had probs i could go to my partner - so that made it all the easier!
